Quinoa

Ingredients:
- 1 1/3 cup vegetable broth
- 1 stalk celery, finely chopped
- ½ red pepper, chopped finely
- 1 tablespoon dried onion flakes
- 2 teaspoons small flakes dehydrated garlic
- 2/3 cup quinoa well rinsed in cold water
- Salt and pepper
Preparation:
1. In a medium size saucepan, boil the vegetable broth, celery, bell pepper, onion and garlic over medium heat.
2. Reduce heat to medium-low heat and add quinoa. Cover and simmer 15 minutes.
3. Remove saucepan from heat, cover and let stand 20 minutes or until the quinoa grains are tender and liquid is absorbed.
