Cabbage Soup "A la Paysanne"

A delicious soup full of good vegetables that reminds us of the countryside.

Ingredients :

- 1 tsp tablespoon olive oil
- 1 onion, coarsely chopped
- 1 carrot, sliced or diced
- 1 stalk of celery into small pieces
- 2 cloves garlic, pressed
- 1 Savoy cabbage, sliced
- 6 cups vegetable broth
- 4 slices wheat bread or gluten-free bread
- A little butter or olive oil

Preparation:

1. In a large pot, sauté onion in oil, carrots, celery and garlic for about 10 minutes.

2. Add cabbage and vegetable stock, bring to a boil, reduce heat and simmer 15 minutes.

3. Meanwhile, toast the bread on a baking sheet in oven at 300 ° F for about 15 minutes or until it is dry. Remove from oven, butter or oil and cut into cubes about 1.5 cm.

4. To serve, pour the soup into bowls and sprinkle each serving with diced bread.
