A nice variant of the shepherd's pie!
Ingredients :
- 1 cauliflower, cut into florets
- 1/3 cup rice milk
- 1 tbsp butter or margarine
- 1 cup cooked lentils
- 1/2 cup cooked green peas
- 1/2 cup diced tomatoes
- 1 tbsp tomato paste
- 1/2 tbsp Worcestershire sauce
- 1/2 cup vegetable broth
Preparation:
1. Steam the cauliflower. Mix in blender to puree with milk and butter. Put aside.
2. In a small saucepan, place lentils, peas, tomatoes, tomato paste, Worcestershire sauce and vegetable broth. Bring to a boil, reduce heat and simmer over low heat for about 5 minutes.
3. Place lentil mixture in 8 by 8 inches baking dish. Add the cauliflower puree on top.
4. Place in oven at 350°F for about 30 minutes until mashed cauliflower is golden.
