Spring Nuggets

These savory nuggets deserve a worth place on your table alone or accompanied by a hamburger bun and a tahini sauce.

Ingredients :

- 1 cup cooked chickpeas
- 1 plum tomato and 1/2 zucchini (or about 1 cup of mixed vegetables)
- 1 small onion (optional)
- 1/2 cup sunflower seeds (ground or whole, to taste)
- 1 tbsp pumpkin seeds (ground or whole to taste)
- 1 tsp ground flaxseed
- 1 tbsp tamari sauce 
- 1/4 cup fresh parsley, chopped
- 1/2 tsp dried basil
- 1/2 tsp dried tarragon
- 1/2 cup chickpea flour or other flour of your choice
- Brown puffed rice cereal
- Coconut oil or olive oil


Preparation:

1. In a food processor, place the chickpeas, vegetables, seeds, spices and chickpea flour. Mix well.

2. Place the mixture in a bowl and add puffed rice cereal until the consistency resembles ground beef.

3. Shape 8 patties. Fry meatballs in oil in a skillet on both sides until browned.
