Spinach and Almond Balls

To use almost everywhere! Spaghetti in tomato sauce, fettucine alfredo, etc..
Servings : 8 (about 32 balls)
Ingredients :
- 1 block (454g) tofu, chopped
- 3/4 cup mayonnaise
- 1/2 cup rice flour or cornflour
- 1/3 cup chickpea flour
- 2 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp Salt
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- Pepper to taste
- 1 package (10 oz) of frozen chopped spinach, thawed and drained
- 2/3 cup chopped almonds
Preparation :
1. Preheat oven to 350°F. Oil a baking sheet.
2. In a large bowl, combine tofu, mayonnaise, flour and seasonings. Mix well.
3. Add spinach and almonds and mix well.
4. Make balls about 2 tbsp mixture.
5. Place the balls in the oven until golden brown, about 35 to 40 minutes.
