Salmon in Coconut Crust

The coconut and lime blend beautifully with the salmon.

Ingredients :

- 1 lb (454 g) frozen salmon
- Olive oil
- 1/2 cup puffed brown rice (like "Rice Crispies"), reduced to crumbs (you can chop in food processor)
- 1/3 cup finely grated coconut
- 1 pinch cayenne pepper
- Fresh lime juice


Preparation:

1. Preheat oven to 425 ° F.

2. Prepare the bread crumbs, mix puffed rice, coconut and cayenne pepper.

3. Brush salmon fillets frozen oil.

4. Sprinkle salmon fillets with bread crumbs on both sides.

5. Bake salmon 20 minutes in the oven (do not cover).

6. Serve with a dash of lime juice!

For a sweet touch, you can add a little honey in the olive oil when basting the salmon.

This dish is accompanied very well with a Black beans salad with lime.
