Quinoa cakes stuffed with tuna

Delicious tuna stuffing in crispy quinoa cakes.
Yields 5-6 cakes
Cakes:
- 2 cups cooked quinoa
- Juice from 1 or 2 limes (to taste)
- 1 / 2 cup bread crumbs or ground rice crispies
- 1 egg, beaten
Stuffing:
- 1 can (170 g) of light tuna chunks, drained
- 2 green onions, chopped
- 1 egg, beaten
Preparation:
1. Combine cakes ingredients in a medium bowl.
2. Combine stuffing ingredients in another medium bowl.
3. Create small "nests" in the palm of the hand with the mixture of quinoa. Add the tuna and garnish with a little bit of quinoa mixture.
4. Place the cakes in the oven to 350°F for about 20 minutes.
Serve with a green salad or steamed green vegetables.
