Moist Carrot Burgers

A good way to get kids to eat vegetables!
Makes 8 burgers
Ingredients:
- 8 burger buns
- 5 cups sliced carrots
- 4 tbsp tablespoons pumpkin seeds, ground
- 8 v. tablespoon chickpea flour (or more, if neccessary)
- 1 tsp teaspoon seasoned salt (Herbamare style)
- Grape seed oil
Preparation:
1. Cook carrots to steam for about 10 minutes.
2. Drain well and mash.
3. Add pumpkin seeds, chick pea flour and salt. Mix well. (The texture of the puree should be relatively dry).
4. Shape about 8 patties.
5. Cook on each side in oil over medium heat until golden brown (do not burn!).
6. Serve burgers in buns with alfalfa or greens of your choice.
Variations:
- Add chopped fresh herbs to the mixture of carrots (basil or cilantro or other)
- Replace the carrots with another vegetable (squash, turnip, sweet potato, etc.).
