Makes 8 to 10 pancakes
ingredients:
- 2 medium zucchini grated
- 1 cup rice flour
- 1 cup chickpea flour
- 1 tsp teaspoon salt
- 1 / 3 cup nutritional yeast
- 2 / 3 cup to 1 cup water (depending on size and moisture zucchini)
- 1 tsp tablespoons olive oil
Preparation:
1. Mix all ingredients in a bowl.
2. Heat a lightly oiled pan and pour the batter with a ladle.
3. Grill small pancakes over medium heat, 4-5 minutes per side.
Variations: Try with other vegetables in season.
