Servings: 4 to 6
Ingredients:
- 2 tablespoons olive oil
- 1 small onion, chopped
- 1 teaspoon cumin, ground
- 1 can (540 ml) chickpeas, drained
- 1 tablespoon of tahini (sesame butter)
- 175 g plain yogurt
- 1 clove garlic, pressed
- 2 teaspoons lemon juice
- Salt and pepper to taste
- 1 Lebanese bread or several small pita breads
Preparation:
1. In a skillet, heat 1 tablespoon olive oil over medium heat and melt the onion 2 to 3 minutes. Add cumin and cook 1 minute, until it releases its aroma.
2. Put into blender or food processor the onion, chickpeas, tahini, yogurt, garlic, lemon juice, salt and pepper. Mix until smooth.
3. The engine still running, pour the remaining tablespoon olive oil and continue until the mixture is homogeneous.
4. Serve the hummus with Lebanese bread or pita. Garnish with cooked beets, tomatoes, alfalfa, etc..
