Tomato sauce with herbs

Servings: 4 to 6

Ingredients:

- 1 green pepper, chopped
- 2 onions, chopped
- 1 stalk celery, chopped
- 2 cloves garlic, pressed
- Sliced mushrooms or zucchini into half moons
- 2 tablespoons olive oil or other
- 28 oz (796 ml) crushed tomatoes, canned
- 2 tablespoons tamari sauce
- 2 tablespoons herbs, fresh or dried
- 1 teaspoon sugar
- 1 teaspoon miso (optional)

Preparation:

1. Sauté vegetables in oil a few minutes over low heat.

2. Add tomatoes, cook for 8 to 10 minutes.

3. Turn off heat and add remaining ingredients.

This sauce, quick to prepare, is delicious on pasta, in soups, on  lightly cooked cabbage slices, on a chickpea loaf or any other dish of your choice.
