Chickpea Loaf

Servings: 4
Ingredients:
- 1 cup dried chickpeas or 2 cups cooked chickpeas
- 2 teaspoon vegetable concentrate
- 1 ¼ cup finely chopped onion
- 3 tablespoons tamari
- 3 eggs, beaten
- 1 ¼ (approximately 125 g) cup mozzarella cheese, grated
- ½ cup bread crumbs
- 1 tablespoon dried parsley
- ¾ teaspoon basil
- 1 ¼ cup carrots, grated
- 1 large clove garlic, pressed
- ¼ cup food yeast
Preparation:
1. (If the chickpeas are cooked, follow step 1, otherwise go to step 2.) Soak the chickpeas overnight. Rinse and cook 45 minutes in 3 times more water with vegetable broth.
2. When the chickpeas are cooked, drain them and pass them in a blender or food processor.
3. Add all other ingredients and mix well.
4. Pour the mixture into an oiled loaf pan and bake at 350 ° F for 45 minutes. Serve as is or with tomato sauce with herbs or with any tomato sauce to taste!
