Veggie Sloppy Joes

Ingredients:
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 1 small clove garlic, pressed or ¼ teaspoon garlic powder
- 3 cups of vegetables (carrots, celery, peppers, etc..), Coarsely chopped or diced
- 1 block (454g) tofu, crumbled
- 2 cups puffed rice cereal (yes, yes, Rice Krispies will do, but I prefer using brown rice)
- 3 to 4 tablespoons tamari
- ½ cup chili sauce
- 2 tablespoons Worcestershire sauce
- 1 ½ cup vegetable broth
- 2 teaspoon chili powder
- 1 teaspoon Miso
- 1 pinch pepper
- 1 can (796 ml/28 oz) diced tomatoes with juice
- 1 can (156 ml/19 oz) tomato paste
- 8 hamburger buns
Preparation:
1. In a large saucepan, cook onion and garlic 2 minutes, stirring frequently. Add remaining vegetables and cook, stirring 2-3 minutes.
2. Add tofu, cereals, seasoning, vegetable broth, tomatoes with juice and tomato paste. Mix well. Cover and simmer over low heat about 10 minutes, stirring occasionally.
3. Serve on hamburger buns (toasted if desired).
If we freeze the mixture, it becomes a little bit liquid when it thaws. You can add cornstarch to thicken it.
